Brew-tiful Inspiration

Our newest brew, Salvaged Signs Double India Pale Ale found its inspiration from the very walls of our brewery. We are so excited to share with you this spectacular brew that will be making its debut as part of our inaugural 16 oz. can lineup!

This Sabro and Citra hopped DIPA will only be available for a limited time – make sure you grab yours from the tap room before they’re gone!


Reuse, Recycle, Repurpose

Salvaged Signs DIPA is born out of our passion for reusing, recycling and repurposing – a mantra that we’ve incorporated into our style here at Playalinda Brewing Company. 

Whether it’s the wood at Brix Project salvaged from the building’s former life as a lumberyard and manufacturing facility, the creative and historic shelving behind the bar at Hardware Store, or the spent grain from this delicious brew feeding local cattle – we are always on the lookout for creative ways to have a sustainable impact in our community. 


The Sign

When our exterior sign was heavily damaged in 2017 during Hurricane Irma, our resident “Jim of All Trades” went to work literally putting the pieces back together to make what is now a pretty badass mural on the far wall of our brewery. Check out the video below!


The Beer

A big, balanced double india pale ale that finishes with hints of coconut and citrus, Salvaged Signs DIPA is more than just a beer; it’s a testament to our unwavering commitment to sustainability, community, and craftsmanship – one pint at a time.

August Brunch

Bring on the brunch! Chef Justin got wind that August is National Brownies for Breakfast month…so we have that going on along with some delicious craft cocktails exclusive on our brunch menu! We’re also featuring a new brunch inspired flatbread and another croissant breakfast sandwich! Read on for more info:

Matcha Mint Julep

One of our Brew Crew, Matt was inspired to create a special matcha cocktail – which takes a fun, modern spin on a classic Mint Julep. This unique cocktail features Old Forrester Bourbon, along with matcha, sugar, lemon, and mint.

Fizzy Lifting Drink

You all loved this one so much as our Cocktail of the Week, we decided to bring it back as a special brunch cocktail! Made with Cathead Vodka, ginger beer, lime, topped with prosecco and finished with some mint.

Sage Apple Flatbread

Crumbled sage sausage is complemented by thinly sliced apples, cheddar cheese, peppers, and a smokey gouda cheese sauce.

Brownie Bread Pudding French Toast

This is the real star of our brunch menu, which was inspired by the perfect idea to make August National Brownies for Breakfast Month! Chef Justin has created a delicious brownie bread pudding and topped it with cinnamon, vanilla, chocolate chips, and whipped cream…naturally.

Croissant De Chorizo

For the savory brunch goer! This croissant sandwich is loaded with scrambled eggs, chorizo, white cheddar curds, peppers, and onions, served with a side of breakfast potatoes.

JOIN US AT BRIX PROJECT AS WE CELEBRATE LOVE THE BEST WAY WE KNOW HOW, WITH BEER. 

Executive Chef Justin and Brewmaster Ron Raike are back at it to craft a special 4-course menu that is expertly paired with Playalinda beers. Imagine dining in the unique ambiance of Brix Project’s taproom and enjoying creative dishes from one of the most unique eateries in Brevard County.

We have a limited amount of tickets available and we expect them to sell out quickly. Tickets are $75 per person and include gratuity and tax. You can purchase yours online, in either taproom or via phone (321) 567-5974.

First Course/Appetizer – Oyster Rockefeller

spinach, watercress, onion compound butter, roasted oysters with panko and parmesan

 

Second Course/Soup & Salad – Roasted Beets and Winter Squash Soup / Amaranth Cherry Salad

soup: beets, potato, acorn squash, garlic, leek, coconut, crème fraiche

salad: spinach, honey crisp apples, shaved gorgonzola, cherries, candied pecans with a maple vin

 

Third Course/Main Course- Lamb Mole with Chiles Pasillas Rellenos De Papa

Crafted Cocktails…On Tap

No shaking. No stirring. On Tap.

And no, we’re not talking about beer, we’re talking about craft cocktails, on tap.

As we began developing our craft cocktail menu, we decided to include something a bit different that we don’t see on this side of I-95 too often, draft cocktails. This is a trend that has been booming around craft cocktail bars all over the country and we’re pretty stoked to bring North Brevard a taste of what major metropolitan cities are sipping on.

You can come and sit down in the taproom at Brix Project and within a few minutes, you can have a fresh, house-made draft cocktail within arms reach. We of course, still offer the hand-made craft cocktails, but the draft cocktail is a hip alternative, that generally requires less time and elbow grease.

We offer four signature craft cocktails on tap including:

Moscow Mule – Wodka Vodka, ginger beer and garnished with lime and mint

Playa Punch – Appleton Signature Rum, watermelon, garnished with lime and mint

Whiskey Daisy – Old Forrester Bourbon, Cointreau, grenadine and garnished with lemon

Classic G&T – Tyler’s London Dry Gin, tonic and garnished with lime and thyme

 

Draft Cocktails - Playalinda Brewing Company - Brix Project

So how does it work?

We know our beer. Well. So it was simply applying the same process of pushing beer through the tap lines to come out on draft. One of our mixologists carefully measures out the recipe and mixes it in a slim keg and then hooks it up to a draft system with CO2, which then pushes the delicious cocktail mixture up and through the lines for you to enjoy. We have found that the CO2 gives the cocktail a subtle and enjoyable carbonation, that you wouldn’t get otherwise.

Our mixologists have carefully crafted recipes that suit our draft cocktail system and our guests perfectly. We enjoy switching things up, but you will almost always find a mule, punch and of course the G&T on tap.

Every week we feature a speciality hand-crafted cocktail of the week at Brix Project. We release the newest feature every Thursday. Here is what you can expect to be sipping on for the month of November.

Week 1 – Nov 2: Honey, I Drank the Bourbon – Old Forrester Bourbon, lemon, honey and grapefruit.

Week 2 – Nov. 9: Gobe – Hayman’s Gin, blood orange and elderflower.

Week 3: Nov. 16 – Florida Sunshower – a fall in Florida inspired Dark & Stormy with Goslings Black Seal Rum, apple brandy, sugar, lime and ginger beer.

Week 4: Nov. 23 – PomApple Mule – Wodka Vodka, lime, ginger beer, Smiling Goat Jam Pomegranate Apple Cocktail Jam and mint.

Let’s spoil your taste buds with Sunday Brunch at Brix Project. From 10am – 1 pm you can indulge in some of our delectable brunch dishes including Irish Egg Rolls, the Chuckwagon, Amaretto French Toast and more. The Masteller

Muddles blackberry, pineapple juice and bubbles

El Jimador Resposado, strawberry puree, jalepeno simple syrup, lime, splash of grapefruit

 

Tuna Tartare

Lime ginger sesame marinated tuna stacked on avocado and sticky Jasmine rice, with a picked beer coulis and wasabi sauce – add seaweed chips for $1

Texas toast dipped in amaretto butter, topped with cherry balsamic compote and powdered sugar

House smoked salmon with a chive caper dressing on toasted rye, served with fries

Exclusive dining option at The Brewer’s Table at Playalinda Brewing Company – Brix Project

Starting on October 19th, guests with parties 12 or more who are dining at Playalinda Brewing Company – Brix Project will be able to reserve The Brewer’s Table, a unique and immersive dining experience in the brewery.

Guests will be seated at a custom-built farmhouse style table created by Barn Light Electric, a lighting and furniture manufacturing facility also located in Titusville. Above the table there is a vintage industrial light fixture, which came from the owners, Donna & Bryan Scott’s personal collection.

“We’re excited to be offering our guests the chance to not only see more of the brewery, but to have a truly unique experience dining at Brix Project,” says Brewmaster and Co-Owner, Ron Raike.

Details on The Brewer’s Table at Brix Project:

  • Available for reservations Monday-Sunday from 6 PM – close
  • Minimum reservation of 12 adults
  • Required 24-hour notice on any reservations

The table will be available for reservations starting on October 19th and can seat up to 18 people. Reservations are required 24 hours in advance via info@playalindabrewing.com.
